My passion for baking has taken a serious beating since I started on this health kick! I do get to bake sometimes but it’s been a rare occasion like a birthday or a party.

But this week something wonderful happened. I baked cookies! I don’t know what came over me; I didn’t worry about calories or the amount of sugar and butter, I just baked! It was so much fun.

That being said, I did adjust the amounts without even thinking about it so that the cookies wouldn’t be that heavy. But here’s the recipe so you can decide for yourself if you want to tweak it or not! And by the way, they are delicous!

Peanut butter oatmeal cookies

30 g of butter

25 g of peanut butter

2 dl of oatmeal

1 tsp of baking powder

1 tbsp of flour

1 dl of sugar

1 egg


Melt the butters in the microwave. Blend the dry ingredients together and add the butters. Stir, add the egg and stir again. Bake at 200 °c (400 °f) for about 5 minutes. Let them cool before eating if you can 😊
